"The cake was delicious as my fussy son and his wife and two daughters would testify. My husband shared it too. Would you believe that it was cut into six slices and all was consumed. They were huge! I have been a diagnosed coeliac for almost 34 years and this is the best flour ever, particularly as I need to avoid wheat starch. I love the smell and look of it. "I recently bought some Teff Flour at the Gluten-free food fair in Winchester and have baked your lovely chocolate cake using the Teff Flour and Flour mix. Can Teff Flour be substituted for ordinary wheat flour in most recipes? For example can I substitute the flour used in making a roux sauce for Teff Flour? and can I substitute the flour used in an ordinary Victoria sponge for Teff Flour without using the gluten free flour mix also?" Mandy, 30.09.11

When Sue advised that she could substitute it in almost any recipe Mandy wrote:


"Thank you very much for your speedy response. I shall use the Teff Flour from now on, what with its added bonuses of calcium etc it will be a great substitute. I'd be happy for you to use my comments on your feedback section. I made Caramel Slices yesterday substituting the flour in the recipe for brown teff flour and they were lovely. I also made a cheese sauce today, for a lasagne, (using gluten-free pasta sheets) again substituting the flour in the recipe for brown teff flour, as I have no white teff flour as yet, and although it looked like chocolate sauce it tasted great.”






During July 2011, after the swingeing cuts in the prescribable product list in the South East, I conversed with many patients who worry that our products won't work like the mixes which have been delisted.

"Of course, it was a bit of a foregone conclusion that with the cuts, the NHS was going to home in on gluten-free products like radar. From the list I was given by my G.P. the first thing that came into my mind was that SECA had gone for the cheapest products they could find. That's not to say of course that the cheaper products aren't worthy products (with the exception of long-life bread!), it's just that so many of us coeliacs have gone for the products that are produced by companies who have the most money to spend on marketing an advertising. Hence my use of Glutafin products. I had heard of Innovative Solutions products though, just never tried them before as I stuck to what I knew and what worked for me. I quite believe your remark about additives etc. and again it's something I hadn't considered. Thank you for the bread recipes that you emailed to me. I will certainly be trying your product on my next prescription and see how successful my bread and cakes turn out to be."

"I am sure, as in most things, the slightly smaller businesses producing gluten-free products will do better than the large ones from a customer satisfaction aspect. Every business is interested in 'the bottom line' for their very existence as they say, but I think the smaller ones are far more conscientious about the products they are selling or manufacturing. Coeliac U.K. Crossed Grain magazine always has a number of speciality small businesses advertising new products. By all means feel free to use any of my comments and I will let you know in due course how the results turn out." JI, July 2011

"Sue, First thank you very much not only for your reply but for the depth of your answers and explanation. This has given me confidence in your company. I will try what you have suggested and when I use up my current supply of flour I will be trialling your products with a view to switching. I will also recomend your company to people I know that are in the same position as me. And a couple of days later he wrote:

"I made the French bread last night using your instructions on the web site and on your e mail. The only suitable baking tins I had was a 1/2 loaf tin and some round dishes 3/4 the size of an avarage barm cake. I am really pleased with the result it is the first time I have eaten good French bread in over 20 years. I am absolutely delighted with the result so once again thank you very much."



"Hello, I have created a cookbook which will be published just prior to Easter. As some of the recipes are gluten free your company name and products are referred to within those recipes and also within the ‘Notes & Helpful Hints’ section. With regard to other recipes which are not gluten free I have been fortunate enough to obtain logos from companies relating to their flour and other products, and I wonder if you would be kind enough to do the same. I am preparing a collage of company logos on one page to identify more visually the products used." May, February 2011

"Thank you. I am having great success now with the Pure GF blended flour. I have  two versions  for a Panasonic SD255 pre programmed setting.  Maybe you could try them out in your kitchen and see what you think. I do not get constant same loaves but I think this is due to the egg size and amount of water/milk I am putting in, but I still find them excellent although they can be a bit moist some times. At the moment I think I prefer my milk version
. Also am now experimenting on making a good sponge as my next project with the GF blended flour - have you got a Victoria Sandwich recipe that you could email back to me please?" Chris C

"As we need Xanthum Gum in the GF blended flour to make it work correctly why is this separate and not part of the blend?" Chris C, 06.09.10

I have explained that as this recipe is registered with the ACBS government approval body, we are unable to make changes without submitting a new recipe. Watch this space, though, as we have some new blends due very soon.




"Would you be able to obtain White /cream Teff Grain in the near future? I already purchase from you the brown/red Teff which is excellent but should you have the cream Teff I would definitely upgrade. Since eating Teff in my food my eczema has improved 100%. I am very grateful to you and your team for providing this comforting supply." Anne C, 31.08.10

We are trying to source some ivory grain but were interested to know how she used Teff grain.....

"I use the grain for porridge with raisins, cocoa and vanilla. In savory dishes for burgers and fried with potato and onion cakes."

Having sent some Teff cake mixes to a coeliac group in Crawley for members to try we were very pleased to hear this comment:

"I did as you asked and made one of those cake mixes, from the silver packets.  I made a carrot cake and my friends and family said it was delicious and want me to make some more!  We wouldn't have known it was gluten free.  It was a great success." Emily R, 03.03.08, Crawley Coeliac Group




After a successful gluten-free bread trial at Manchester Metropolitan University, using Pure products, a member of the Manchester Coeliac group wrote:

"We did a tasting at MMU yesterday, six of us went and the bread she made was excellent.  We first tried a bread she made without Teff flour, it was moist, smelled like fresh normal bread, looked good, texture good,consistency good, I was very impressed.  We then had a control test on three breads, one had 10% Teff flour one 20% Teff flour and one no Teff flour.  They all had different numbers so we did not know which we were eating and we could not confer with each other.  They were all great, it was a hard job to say which was the best.  She was a lovely lady and she gave us a loaf of each bread to take home.  I will contact her supervisors to say how professional the tasting and the bread was." "Dear Sue, I would be very pleased for you to put my "FANTASTIC" onto your webpage, but wonder if it is worth my adding a few more comments. For instance, before I was diagnosed with Coeliac Disease 3 years ago I used to buy what I describe a 'pure' baking products from my local health food shop. Before I discovered your products I had to put up with baking products from other well known Gluten Free suppliers that contain a long list of additives which I am quite reluctant to send down to my already weakened digestive system! These products are probably alright, but I would much prefer to use yours, so very much hope they will be available to me again in the future." Brenda C, 17.12.08

We received an email expressing one customer's delight that whole grain Teff was available in the UK. After we answered some questions about our ethos and our decision not to produce a complete bread mix we then received the following comments:
 
"I was very interested in the information you have given me. It is good to know the processes our food has to go through to be uncontaminated. Lastly, the most important thing coeliacs need is explanation and information on their food. Other companies seem to think that we won't notice what goes into these products...I am so pleased that you decided not to market the bread mix, and confirms my feelings. It makes my confidence in your company go sky high and I think you should use this in your marketing that you keep away from the chemicals. Any updates you have I would be very interested, I have just ordered all your flours on prescription, a Pyrex loaf pan has arrived this morning so I am all set!  Let the experiments begin! Thank you for your time" G Doughty, April 2009




"I just got my first prescription of flour from you, including brown teff, and it was lovely. I made pastry with it yesterday and it's yummy. It's so nice to have prescription options for wholefoods (which fits with my approach to diet), as I was horrified by the amount of extra rubbish put in all the main brand gf stuff, and was not tempted by something called "white mix". We always like to help patients who are recently diagnosed as it can be so daunting thinking you'll never be able to eat bread again, and here's what Colin had to say:

"Sue, What a delight to receive your mail. You must have a vast customer base if you treat every new customer like this. Being new to all this I now feel I have some one holding my hand and that's great.Thank you. I will try your recipe later" Colin, Hampshire,14.12.09





We had a request for more information about the origins of our xanthan gum as this customer has been known to have severe reactions to corn based products.

"This one came to my sister on prescription, so she's using it.  Obviously, when we're both cooking for an extended family with a variety of requirements, we try to standardise as much as possible.  I won't turn blue and die, I'll just have one really bad stomach upset and a few days feeling battered.  I was just hoping to avoid the "suck it and see" fun and games!  I've reacted to gums before.  In fact, I react to the tiny bit of maize-derived maltodextrin they use as a base to add vitamins to spreads.  It's a bit of a nuisance, and eating out is a minefield!"

We were delighted when she reported back:

"Tested your gum to destruction now and it hasn't bothered me at all. Just thought you'd like the results from research in the field!! We have various and multiple intolerances in our family and it's fabulous to find a product we can all trust to produce great results and not cause any reactions at all."  G., Cheshire 13.02.2010




"I have even got my husband hooked on eating it [teff Rochdale loaf ](that is a first). We have 2 slices left I didn't need to freeze it. I just put it in a plastic box and it's still yummy. I say at the moment it's the best I have made. Because I had a birthday yesterday I made your teff rich fruit cake . I tell you what - it is amazing. Think I will have a birthday every week ha ha .!! To think I don't normally eat cake too".

Chrissie S. was delighted with the Chocolate Banana Bread (19.08.10) and says the Oatmeal Date and Chocolate Cookies are a favourite with all the family!




"I have been receiving monthy prescription orders from your company since being diagnosed with coeliac disease several months ago. I would just like to let you know how nice it is to be able to get hold of basic flours, such as the brown and white rice flours, instead of all the pre-mixes in little cardboard boxes. Although I know it is possible to get rice flour in some supermarkets, I also am aware that many of them are possibly cross contaminated with wheat".K Van Dyke, 04.08.10


She also suggested contacting Alyssa Sergeson after finding a recipe on the internet which turned out really well, and she has kindly allowed us to use her recipe for Dark Teff Sandwich Bread on our Teff sachets - well done!
