A very fine potato starch which is excellent in baking or when combined with other flours. It is also useful as a thickener for sauces and gravies. Remember though, that when sauces cool down upon serving they will thicken and possibly congeal if the concentration of flour is high, therefore make the sauce lighter at the stove than you want them to be at the table! Recently approved as a borderline substance, this flour is now available on prescription.

A great constituent of many gluten-free flour mixes why not try: 1 cup Teff flour, 1 cup brown rice flour, 2/3 cup potato starch and 1/2 cup of tapioca starch.

The product comes in handy 500g foil sachets.
