Teff is a wonderful alternative to wheat, barley & rye for people on a gluten-free diet & will expand food choices beyond potato, corn, tapioca and rice flour.

So what is it? Tinier than a poppy seed Teff is a nutritional powerhouse-it's use can be traced back over more than 5000 years. In all grains, nutrients concentrate in the germ and the bran-with Teff the germ and the bran make up almost the whole grain, and since it is too small to hull, it can't be refined to lose nutritional value.

Eragrain is a carefully selected and preserved variety of an ancient grain called Erogrostis tef, which originates from the rich growing regions of Ethiopia and Eritrea in East Africa. Containing more calcium, zinc, iron and potassium than any other cereal grain, Teff is an enticing alternative for today's health conscious markets, from athletes to dieters, coeliacs to diabetics. Unlike wheat and most other cereals, it contains more vitamin C and has higher levels of amino acids. This excellent amino acid composition (including all 8 essential amino acids for humans) and higher lyseine levels than those of wheat or barley, results in more efficient stimulation of the flora of the large intestine. Teff has high levels of carbohydate and has a high fibre content, but is low in fat (1g per 2 oz serving).

Teff is a fine stemmed, tufted annual grass characterized by a large crown, many shoots, and a shallow diverse root system. The plants germinate quickly and are adapted to environments ranging from drought stress to water logged soil conditions. It is a reliable low risk crop. There are 250 known species of Eragrostis, or love grasses, but only a few are of significant agricultural value.

The grain is harvested from large crown grass which produces tiny seed grains (1000 weigh only 0.3-0.4 grams) and it is so small that it is not feasible to separate the germ from the husk, so the entire seed is milled and consumed. This results in richer nutritional uptake, higher fibre content (8g per 2oz serving) and the whole grain flavour is mild, nutty and slightly sweet. It's complex carbohydrates(slowly digestible starches) give it a low glycaemic index making it ideally suited for endurance athletes, for weight loss and diabetics. In fact the superior athletic performances of Ethiopians in endurance sports is thought to be attributed to the amount of Teff consumed as a normal part of their diet in the form of injera bread, a fermented dough pancake. Low incidence of anaemia, osteoporosis and diabetes in this part of Africa is also believed to correlate with a diet rich in Eragrotis tef. It is a versatile flour and can easily used to make bread, porridge, pasta, pancakes, biscuits, waffles,cakes, muffins and pastries - recipes are available in the recipe section on this website. It cooks quickly (in around 20 mins) and is a good thickener for soups, stews, gravies and puddings and can also be used in stir-fry dishes and casseroles.

To make a GF substitute flour mix why not try:

1 cup teff

1 cup brown rice flour

2/3 cup potato starch

1/3 cup tapioca starch

Of course you may need to add a little xanthan gum (try 1/2 - 1 tsp) if you are trying to spoof a regular wheat recipe.
